Notes on viticulture and winemaking:

Vines are planted on south facing slopes, rooted in coarse degraded granite soil. It was a hands-on process, with careful bunch selection and micro management in the vineyards. Grapes were harvested in early 2020. 60% of the wine was fermented with natural yeast in stainless steel tanks; 40% in old French oak barrels for 3 months before blending back into tank. It was left on the rough lees for five months before minimal fining, filtering and bottling.

Look for these flavours:

Granite and flint flavours dominate with lots of grapefruit, citrus and white pear on the nose. On the pallet it is shows lots of structure with an lively acid and creamy tannins and a long lingering aftertaste.

Cellaring potential:

Cellar for up to five years.

Food suggestions:

This wine will suit a charcuterie board with cured meats, some smelly cheeses and pickled preserves.
